Here’s how to install the beta:

• Open up Steam
• Right-click on ARK: Evolved in the left pane
• Select Properties
• In the Properties window, select Betas
• In the Beta Participation dropdown, select preaquatica – ASE: Pre-Aquatica
• Let Steam download the needed files to install/revert to the PreAquatica beta

And that’s it!
